Another great day!

Well, another amazing day here. Sun shining all day and summer is definitely getting near! It got pretty hot this afternoon so cant wait to get out and play some golf soon. Went for a refreshing walk along the walking trails today for some exercise and picked up some good groceries too at the market. On the list was spinach salad, red onion, oyster mushrooms, balsamic vinegar, olive oil, salmon, fresh dill and rosemary. This is dinner. Oh yah. Amazing.

Heres what I do to prepare it. You should give it a try. Healthy choice, proteins, veg, everything ya need, its here. And super easy and quick too.

Get a pan nice and hot and saute off some mushroom and onions that are thinly sliced in some olive oil. Once theyre cooked off turn the heat down and add a small amount of balsamic vinegar and toss it in the pan. While your cooking this you should have your salmon ready to go. My favorite way to do it is on the grill. Get the grill nice and hot. Chop up the dill and rosemary very fine and lightly spread it over the top ofthe salmon. You can salt and pepper to taste but i prefer none as its delicious just with the herbs. Then grill it on both sides for about 2 -3 minutes and take it off.

Place your spinach salad on the plate and spread the sauteed mushrooms and onion over the top, with a bit of the balsamic reduction you have in the pan. Add the grilled salmon on top of that, add a sprig of rosemary to the salmon and a lemon slice on the side and voila, dinner in about 10 minutes from start to finish. Give it a try and enjoy!
